Allergy Free Chocolate Chip Cookies
Chocolate Chip Cookies are probably one of the most comforting things ever. That sounds bad, like I just eat my feelings, but it's true! Today was one of those days where all I could think about was getting home, putting PJs on and relaxing. BUT first, I took a trip to Whole Foods after my work day was done to pick up some allergy friendly foods that I needed.
Is it just me, or is NYC turning into a Christmas wonderland too soon!? The day after Halloween, Christmas lights were going up already, and today there were Christmas decorations and Christmas music playing when I was shopping! Don't get me wrong, I LOVE Christmas music, but can we at least wait until Thanksgiving is over? Maybe not, there's too much Christmas spirit around to be contained! Anyway, the holiday atmosphere made me want Chocolate Chip Cookies even more, it's such a holiday dessert, along with being an every day of the year dessert :)
So, I wanted something quick, easy and allergy friendly, and King Arthur Flour Gluten Free Cookie Mix is the best cookie short cut that I have found so far. You can definitely make cookies from scratch, or make your own mixture of flours like I have done numerous times, but let's face it, sometimes you just don't want to.
Soooo, tonight I made some cookies and pigged out. Well, I didn't really pig out that badly. I really only ate 2 cooked cookies, but I probably ate another 2 in just dough as I was making them. I followed the instructions on the back of the box, super easy. I just added in some yummy extras. Here they are:
about 1 tsp of vanilla extract
1 cup of chocolate chips (add more if you want!)
1 tsp of cinnamon
I know cinnamon in chocolate chip cookies sounds weird, but I think it tastes so good. It adds from autumn flare to the cookies. In place of regular butter I used Earth Balance butter substitute which is PERFECT for baking.
So, I finished off my long rainy day with cookies and a warm cup of tea. I'm a firm believer that you can't finish off the day the right way without a nice cup of tea. Chamomile with some honey was the perfect way to unwind with my cookies :)
(P.S If you roll out all of the balls for your cookies and put them in the freezer in a zipped bag, they keep forEVER and you can throw them on a cookie sheet right out of the freezer whenever you want some cookies. A tip I picked up from my boyfriend's mom who is a baking machine.)
